INGREDIENTS
FOR CAKE
1 cup (125 g) all-purpose flour
1 tsp baking powder
¾ tsp baking soda
½ tsp ground cinnamon
¼ tsp ground nutmeg
¼ tsp salt
½ cup (100 g) granulated sugar
¼ cup (50 g) brown sugar, packed
⅓ cup (80 ml) vegetable oil
2 large eggs
1 tsp vanilla extract
1 ½ cups (150 g) grated carrots
¼ cup (25 g) chopped walnuts or pecans (optional)
¼ cup (30 g) shredded coconut (optional)
GLACÊ FROSTING
1 cup (125 g) powdered sugar
1–2 tbsp milk (or water)
½ tsp vanilla extract

INSTRUCTIONS
STEP 1
Preheat oven to 350°F (175°C). Grease a 9-inch cake pan.
STEP 2
In a Fattoria Mixing Bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
STEP 3
In a Fattoria Batter Bowl, whisk together granulated sugar, brown sugar, oil, eggs, and vanilla.
STEP 4
Fold the dry ingredients into the wet mixture. Stir in grated carrots and optional nuts
or coconut.
STEP 5
Pour batter into the prepared pan. Bake for 35 minutes, or until a toothpick comes out clean. Cool completely.
STEP 6
Place the cooled cake in a Cook&Host cake stand.
